Dehydrating Food for the Trail

Home food dehydration allows you to carry nutritionally dense, familiar food at trail weights comparable to commercial freeze-dried meals, at a fraction of the cost. The process removes moisture to a level that inhibits bacterial growth — the food safety standard is reducing water activity below 0.85 for most foods. Understanding the correct temperatures, times, and food safety margins is more important than the specific recipes.

Equipment

A food dehydrator with a thermostat and a fan is the essential piece of equipment. The Excalibur 9-tray with a rear-mounted fan is the best-known quality model; the Nesco Snackmaster line represents the mid-market. An oven with a door propped open to maintain 55 to 70 degrees C is a functional alternative but less energy efficient and harder to control precisely. A dehydrator with a rear fan (Excalibur design) produces more even drying than one with a top or bottom fan because the air circulates horizontally through all trays simultaneously.

Safe drying temperatures

The general-purpose temperature range is 55 to 60 degrees C (130 to 140 F) for fruits and vegetables, and 68 to 74 degrees C (155 to 165 F) for meat and fish. The higher temperature for animal protein is required to destroy Salmonella, E. coli, and other pathogens before the drying process removes moisture.

Meat pre-treatment: cooking meat to an internal temperature of 71 degrees C before dehydrating (rather than relying on the dehydrator temperature alone) is the USDA-recommended approach for jerky and meat-based trail meals. This is particularly important for ground meat, where surface contamination is distributed through the entire mass during mixing.

What dehydrates well

Cooked beans, lentils, and legumes: dehydrate at 55 degrees C for 6 to 10 hours. Rehydrate in boiling water for 10 to 15 minutes. Lentils are the best bang-for-effort option — cheap, nutritionally excellent, and they rehydrate completely in 10 minutes of simmering.

Cooked grains (rice, quinoa, barley): spread cooked grain in a thin layer; dehydrate at 55 degrees C for 4 to 8 hours. Rice rehydrates poorly compared to cooking fresh; quinoa and barley rehydrate more consistently.

Vegetables: most vegetables dehydrate well. Blanching before drying (60 to 90 seconds in boiling water, then immediate cold water bath) preserves colour and reduces drying time. Tomatoes, peppers, mushrooms, courgette, and onions are the most practical trail vegetables. Tomato paste spread thinly and dried becomes tomato leather — a flavour concentrate that dissolves into sauces.

Meat: sliced beef, venison, bison, and chicken breast at 3 to 5 mm thickness. Marinate overnight for flavour; pat dry before dehydrating. Standard jerky at 68 degrees C for 4 to 6 hours. For cooking-base meat, cook stews or chilli to a dry (not soupy) consistency first, then dehydrate — the result rehydrates fully with boiling water in 15 to 20 minutes at camp.

What does not dehydrate well

High-fat foods — bacon fat, butter, cooking oils, full-fat cheese — do not dehydrate because fat does not have a water content to remove. These foods also go rancid during storage and transport. Hard cheese (Parmesan, aged cheddar) can be carried without dehydration for up to five days in cool conditions.

High-water-content foods with a tough skin — whole grapes, whole cherry tomatoes — dehydrate unevenly because moisture cannot escape through the skin efficiently. Score or halve these fruits before drying.

Creamy or dairy-based sauces — alfredo, cream-based soups — do not rehydrate cleanly after dehydration. The dairy fats separate.

Complete trail meals: the assembly approach

The most efficient dehydrated trail meal is assembled from components rather than cooked as a complete dish. Example: dried lentils + dried tomato + dried onion + dried mushroom + spice packet = red lentil dal. At camp, boil 400ml water, add all components, simmer 15 minutes, rest 5 minutes. The component approach allows portion adjustment and flavour customisation that complete-meal dehydration does not.

Storage and shelf life

Home dehydrated food stored in vacuum-sealed bags at room temperature: fruits and vegetables, 6 to 12 months. Cooked grain and legume meals, 3 to 6 months. Meat jerky, 1 to 2 months. Refrigerated storage extends all of these by a factor of two; freezer storage extends by a factor of three to four.

Vacuum sealing (FoodSaver or equivalent) significantly extends shelf life over press-seal bags because it removes the oxygen that drives oxidation and rancidity. Mylar bags with an oxygen absorber provide the longest shelf life — up to several years for dry goods — and are used for extended expedition resupply caches.

Calories per gram

The benchmark for trail food is 100 calories per 28 grams (approximately 4 calories per gram). Commercial freeze-dried meals average around 110 to 130 calories per 100g of dry weight. Home dehydrated bean and grain meals average 350 to 400 calories per 100g dry weight, or 3.5 to 4 calories per gram — competitive with commercial options at a significantly lower cost.
